Kit and pantry

Chef Joe Recommended

You don't need a professional kitchen. You need a handful of things that actually work. Here's what I'd buy first.

Knives

An 8-inch Chef's Knife

One good knife replaces a whole block of mediocre ones.

Why it matters: Most of the time people think they're slow at prep, they're just fighting a dull blade.

Pans

Carbon Steel Skillet

Gets hotter than nonstick, and it's where pan sauces come from.

Why it matters: You cannot build a restaurant sauce in a pan that refuses to brown anything.

Pans

Enameled Dutch Oven

Braises, soups, bread, frying — the one pot that does Sundays.

Why it matters: Even heat and a heavy lid do the work while you're doing something else.

Tools

Instant-Read Thermometer

The fastest way to stop overcooking meat forever.

Why it matters: Guessing is the number one reason a good piece of protein comes out dry.

Tools

Half Sheet Pans

Roasting, prep trays, resting rack. Buy two.

Why it matters: Flat, heavy pans roast evenly. Thin ones warp and steam your vegetables.

Pantry

The Six-Item Pantry

Good salt, olive oil, vinegar, stock, canned tomatoes, dried pasta.

Why it matters: With those six on the shelf, dinner is always thirty minutes away.
